Recipe of the Week – My Chef Stuffed Dates with Turkey Sumac

Thank you to Simon Smith, one of My Chef’s master Chefs, for this excellent recipe for turkey with an exotic twist. Roll on Christmas and turkey galore!
THIS RECIPE IS FOR 4 PEOPLE
Stuffed Dates with Turkey and Sumac
250gms Turkey mince
16 Soft dates
1tsp Harissa paste
4 Blanched almonds
6 Dried figs
200gms Couscous
¼ pt Chicken stock
2tsps Chopped coriander
1tbsp Honey
4 strands Saffron
Seasoning
Method
Finely chop the whole blanched almonds
Season the turkey mince with salt, pepper, and the harissa paste, add the chopped almonds
Finely chop the dried figs and mix with the couscous
Tip boiling chicken stock on until just covering the couscous. Cover and leave for 5 minutes
Remove cover and fluff the couscous and add chopped coriander
Cut the dates in half and fill with the turkey mix
Cook in a preheated oven at 160 for 7 minutes
Melt the honey in a pan with the saffron and some chicken stock to make a syrup
