

Jubilee Cocktail – Basil & Vanilla Chase Vodka Lemonade

With the Jubilee celebrations in full swing this fresh cocktail using English potato vodka is the perfect way to get the party going. (serves 4)

Ingredients
For the syrup:, 50g (2 cups) fresh basil leaves, 225g (1 cup) caster/granulated sugar, 500ml (2 cups) water, The peel of 1 lemon, in inch wide strips, For the lemonade:, 2 cups of syrup (see above), 375ml (1 1/2 cups) water, Juice of 5 lemons, 165ml (2/3 cup) Chase vodka – that has been infused with a vanilla pod for a week.
Cooking Directions, To make the syrup first place the basil leaves, sugar, water and lemon peel in a small saucepan over a low heat and bring to the boil. Then stir until the sugar is dissolved, take the pan off the heat and chill for at least an hour.
When cold, sieve the contents into a jug, pressing on the solids to make sure you extract all the moisture. To make the lemonade, add the water, lemon juice and Chase vodka. Serve with ice and fresh basil leaves and enjoy.
