Food – ultimate spaghetti bolognese

Sometimes, only a classic will do. And when it’s comfort food you need, Italians tend to have the answer (don’t they for everything?). Here we present Sorted Food’s ultimate spaghetti bolognaise, for when nothing else will hit the spot. This isn’t guilt food, though. There are loads of vegetables in here, as well as the meat. Tomatoes are particularly good for you when heated up, as they are here, and spaghetti bolognaise is also a cure-all for any number of maladies, from hangovers to homesickness. This recipe even has a secret ingredient.
INGREDIENTS
1 packet of minced beef (500g)
a glug of olive oil
1 white onion, peeled
1 stick of celery
1 carrot, peeled
a handful of mushrooms, sliced
2 cloves of garlic, peeled
1 tsp dried oregano, chopped
squeeze of tomato puree
a glass of red wine
1 tin of chopped tomatoes (400g)
beef stock (400ml)
a splash of milk
a splash of Worcestershire sauce
spaghetti (400g)
handful of parmesan, grated (80g)
RECIPE
Fry off the meat in a deep saucepan with a little oil until browned and transfer to a bowl. ?Dice the onion, celery, carrot and mushrooms and add to the same pan and fry for a few minutes. ?Add the crushed garlic, oregano, tomato puree and red wine and stir to reduce. ?Pour the chopped tomatoes, beef stock, milk, seasoning and Worcestershire sauce into the pan with the fried mince and simmer slowly for at least an hour (a few hours is best). ?Cook the spaghetti in salted boiling water for about 8-10 minutes until cooked, then drain and sprinkle with olive oil, salt and pepper. ?Serve a heap of spaghetti with a generous ladle of bolognaise and grating of fresh parmesan. ??Serves 4
