The Best Cottage Pie Recipe You’ll Ever Need

Ingredients:, 500g of British Minced Beef, 1 Large Onion, 3 Large Carrots, 1 lg tblsp of Apricot Jam, Lee and Perrings Worcester sauce, 1 tin of chop tomatoes, 1 Chicken Stock cube, 1 Bag Maris Piper Potatoes, 1 Bag of frozen garden peas
Kitchen Essentials:, Large Saucepan, Pie Dish, Olive Oil, Butter, Ketchup, Salt & Pepper
The Method:
1. Chop the onion, medium to fine, and grate the carrots
2. In a large saucepan, gently fry chopped onions in a little olive oil/butter until golden. Then add grated carrots and then put the mixture to one side in a bowl.
3. Using the same saucepan, brown the mince over a high heat. Once brown, mix mince, onions and carrots together. Add apricot jam, Worcester sauce, chopped tomatoes, add a tblsp of ketchup, and salt and pepper to taste. Add enough stock to just cover the mince. Cook over low heat for 20-30 minutes.
4. Once done, place the mince in a pie dish and leave to one side. Meanwhile peel the potatoes. Boil for 20 minutes until soft. Then, adding butter and salt and pepper to taste, mash. Place on top of mince and using a fork, evenly spread the mash. Forking will help give a crisp top.
6. Then with knobs of butter on top, cook in the oven for 20 mins or so (or until the mashed potato has browned). Serve with peas, tomato ketchup and more Worcester sauce as required.
Tip: If you have a bottle of red wine open, add a dash when cooking the mince!
